If your late-season tomatoes are still completely green, an extra step is needed to get them on the path to ripening. This is because they haven’t “broken” or started to change color yet, a crucial stage for the air rack method to be effective. To kickstart the process for your green tomatoes, all you’ll require is a brown paper bag and a banana. Just place the green tomatoes in the bag along with the banana. Then, fold the top of the bag to seal it and let it sit for a few days.
The ethylene gas emitted by the banana will expedite the ripening process and initiate the color change in the green tomatoes. Once they begin to show a blush or hint of color, simply take them out and position them on the wire rack or mesh. From there, let nature take its course – the tomatoes will continue to ripen, giving you a bountiful harvest!
